The place
Cadillac, the sweet white, comes from 22 communes on the starfish limestone and molasse of the right bank of the Garonne, looking across the river at Sauternes, with brown limestone soils on the slopes and alluvium at their foot. The red, from a wider area of 39 communes, is sold as Cadillac Côtes de Bordeaux, 1 of the 5 place names of the Côtes de Bordeaux: a band 60 kilometers long and 5 wide along the same cliff, on clay and limestone slopes and gravel rises. The red has 1,247 hectares and 138 growers.
The rules
The sweet white, from Sémillon, Sauvignon, Sauvignon Gris and Muscadelle, is picked by hand in successive passes from grapes touched by noble rot and carrying 255 g/l of sugar; it must reach 15% of natural alcohol and keep at least 51 g/l, at 37 hectoliters a hectare with a ceiling of 40, and it must be bottled at the estate. The red asks 52 hectoliters with a ceiling of 65 and 11.5% of natural alcohol; its Malbec must always be blended with another principal variety, and it is sold from March 31 of the year after the harvest. The 2 wines are planted at 4,500 vines a hectare.
The names
No classification on either side. The sweet white was delimited in 1919, decreed in 1937 and made an appellation of its own in 1973. The red was Premières Côtes de Bordeaux from 1937 and became Cadillac Côtes de Bordeaux by the decree of October 29, 2009; its cahier des charges (the appellation’s official rulebook), the official rulebook, was last homologated on June 4, 2026.
