Château La Cabanne 2016, Pomerol

We opened this bottle last night during the College Football Playoff Semifinal. University of Miami on the screen, Pomerol in the glass, and a win to celebrate. Wine always tastes a little better when the moment cooperates.

This 2016 has moved past its youthful exuberance and into a phase of calm confidence. The fruit feels settled, the tannins are resolved without losing grip, and there’s a savory, truffle undertone that wasn’t as obvious a couple of years ago.

This is one of those Pomerols that doesn’t demand attention but quietly earns it. No fireworks, no excess, just balance. The kind of bottle you finish without noticing how fast the evening went. Miami won and La Cabanne did exactly what it should. :-)
